Added 3.5 grams each of Calcium Chloride and Gypsum to 12 gallons of RO water.

Single infusion mash at 148° F for 60 mins.  Lauter then boil for 90 minutes.  Chill to 45° F and pitch yeast starter.  Allow to free rise to 50° F.  Hold at 50° F for 4 days.  Allow to rise to 60° F and hold for a week. Keg, add CO2 at 8 psi and then drop 5° F every 12 hours until temperature reaches 33° F.  Increase CO2 pressure to 13 lbs. Hold at this temp for 4 weeks.
